| 説明 | There's no shortage of blue catfish in the Chesapeake, but right now, there aren't many products that can be made from blue cats.Two Virginia Sea Grant extension agents are developing marketable products made from blue catfish roe and egg sacs. Bob Fisher of the Marine Advisory Program at the Virginia Institute of Marine Science (VIMS) and Reza Ovissipour of the Virginia Seafood Agricultural Research and Extension Center (VSAREC) of Virginia Tech are exploring different products that can be made from blue catfish. Pictured here is catfish "caviar," or roe. Fisher and Reza are investigating how the protein content changes as the eggs mature, and how that can change the flavor profile of the roe.March 15, 2019.
