| 説明 | Bet you didn't know that just paper, brandy and egg whites are used to seal this apple jelly. Hat tip from the ladies of the Montgomery's Inn kitchen : use the jelly glass to trace a round on the paper, and after soaking the round in brandy, use it on top of the jelly to replace a sealing layer of melted paraffin wax.And before this fall is over, I'll be reading Catharine Parr Traill’s 1854 cookbook Female Emigrant’s Guide and Hints of Canadian Housekeeping (Scan of entire book courtesy Early Canadiana Online.
