| 説明 | ...my best attempt at dal makhani to date! I think I need to find mini rajma (kidney beans) and whole urad dal to get it just right.If you've never had it, I'd describe it as "Punjabi cream chili," probably. Kidney beans, black matpe beans, onions, garlic, ginger, cumin seeds, cayenne, garam masala, tomatoes, butter, cream, salt & pepper, and methi powder.Some recipes recommend putting a bit of hot charcoal in a metal bowl on top of the dal makhani inside the cooking vessel, pouring a little ghee on it so it smokes, and covering the whole with a lid for a few minutes to replicate the dish's authentic slow-cooked-over-an-open-fire smoky flavor, but I don't have actual charcoal lying around. |
