| 説明 | The chocolate slabs seem to have shrunk considerably more than the slabs with the regular cure.In the early stages the most important thing is to keep draining the moisture from the bins and pans.Every day for the first week I drain the accumulated juices that the salt as leeched out, pat them dry with paper towels, and flip them.I added a bit more salt, as well. |
