説明 | The key to good scrambled eggs is cooking them slowly. Start in a cold cast iron skillet. Leave the eggs alone. Just gently nudge them occasionally for a half hour. I don't have this method down to a science yet. The eggs were sufficiently set long before a half hour had elapsed. The other key, by the way, is butter and lots of it. I used olive oil in this case. And, as with any scrambled egg preparation, take them off before they look ready because they'll continue to cook.This method is James Beards' courtesy of M.F.K.
