説明 | Information sign next to the coolship in the cooling tower at brewery Omer Vander Ghinste in Bellegem, Belgium.Material: Entirely in copper Dimensions: 6m x 6m x 0.55mFunction:In the coolship, the wort enters from from the brewhouse to be cooled. It is located just below the roof of the brewery, because this is the best place for heat exchange with the outside air. Today, the coolship is only used for beers of spontaneous fermentation, such as lambic. As the wort cools it gets inoculated with wild yeast (e.g. Brettanomyces) which follows the wort into the fouders (large oak casks) where the wort undergoes spontaneous fermentation.For other beers (e.g. Bockor and OMER traditional blond) cooling is nowadays done with heat exchangers, which take up less space and cool the wort much faster. This insures that the wort is not in contact with the ambient air, reducing the chances of contamination. |
